A culinary Innovator

Vanina’s passion for food is rooted in family heritage, with culinary knowledge passed down from the iconic Doña Petrona de Gandulfo to her mother Marchioness Adriana Principi and then to Vanina herself.

She mastered Argentine charcoal grilling before refining her skills in Peruvian-Japanese Nikkei cuisine at the award-winning Osaka restaurant. Her journey took her to Spain’s Bambuddha, blending Mediterranean and Asian flavors, and then to London at Soho House, leading brigades of 40+ chefs and refining large-scale kitchen operations.

Vanina further honed her expertise at Gordon Ramsay’s flagship restaurant, where she gained invaluable leadership and financial management experience, focusing on operational efficiency, cost control, and strategic growth. She later took on a highly creative role as Head of Menu Development for Bone Daddies Group, overseeing three brands—Bone Daddies, Flesh & Buns, and Shack-Fuyu—across 10 locations.  

With nearly 20 years of experience, Vanina combines culinary mastery, bold leadership, and a deep understanding of business strategy, making her a driving force in the hospitality industry
