From noble Italian roots to leading world-class kitchens, Vanina crafts exceptional culinary brands with precision, elegance, and impact.

Vanina is an internationally accomplished chef and hospitality leader, with nearly two decades of experience across Europe and Latin America. Rooted in a distinguished culinary lineage influenced by Doña Petrona de Gandulfo, she brings together heritage, artistry, and a sophisticated, commercially driven approach to modern gastronomy.

Her career includes senior roles at internationally recognised venues such as Osaka, Bambuddha, Soho House, and Gordon Ramsay’s flagship restaurant, where she developed advanced capabilities in operations, team leadership, and financial performance.

As Head of Menu Development for Bone Daddies Group, Vanina oversaw culinary strategy across three brands and 10 locations, driving concept development, operational efficiency, and scalable growth.

She brings a unique combination of culinary excellence and business acumen, positioning her as a strategic leader in building and scaling successful hospitality ventures.
